Cashews – 1 cup (150 grams)
Sugar – ½ cup (100 grams)
Water – ¼ cup
Cardamom powder – ¼ tsp (optional)
Ghee – a little (for smoothness)
Prepare Cashew Powder
First of all, keep the cashews in the fridge for 5 hours so that they remain dry, then grind them in a mixer and make a fine powder. Keep in mind that do not run the mixer too much while making the powder, otherwise the cashews will start releasing oil.
Make the Sugar Syrup
Now put sugar and water in a pan and cook on medium flame. Keep stirring till one string syrup is formed.
Add cashews
Add cashew powder to the syrup and keep stirring continuously on low flame. Slowly this mixture will start thickening. You can also add cardamom powder to it.

When the mixture starts leaving the pan and thickens, take it out on a plate. After it cools down a bit, apply some ghee on your hands and knead it like flour.
roll out and shape
Now roll the mixture on a smooth surface with the help of a rolling pin. After rolling, cut it into diamond shapes with a knife. If you want, apply silver work on top as well.
Important tips while making Kaju Katli
Always sieve the cashew powder so that no large pieces remain
Do not cook the syrup too much, else the Katli will become hard
Store in the refrigerator, stays fresh for up to 6 days
